12 años despues.

I took this photos of food I made last week, fajitas with potatoes. Below string beans with mushrooms, spinach, onion and bacon.
Today Pepe and I have our wedding anniversary, 12 years of marriage. At that time I didn't care about cooking, our policy was the first one to get home after work is the one that starts cooking, and we ate simple, canned food and not complicated dishes. Today I cook almost every day and I do care about what's for supper, I have to say I even enjoy doing it and discovered I have some a talent!.

Almost finished

All last week I have been sewing that Halloween dress, even Aitana had to help me with some details, and still I need to cut it at the fine lenght. So far, it has been the most complicated sewing project to me. I made it and had to re-made it, because it was to big for Aitana. Pepe always says: No aprendes...always with stressful complicated things to do. This time he was right.
Just because the customer was my own daughter, but this dress has consumed so many hours.

Felicidades.

I was talking to my dear aunt about birthdays and we conclude: although it is not very nice to get old, is better than not having the opportunity to see the sun every day. Thank you all of you than came to celebrate, seeing my little girl so happy is the best present to me.

La Peña de Bernal

From our summer vacation album.

This rock is in the state of Queretaro, very close to Pepe's mama country house. We went to spent a delightful day by its influence. People say it has magical powers. Of course that is just a popular saying, what I have to comment about it is that the little town around is really cute.

Todavia quedan fotos de las vacaciones, esta es de La Peña de Bernal en Querétaro.

Halloween project.

Oh well... Like a month ago, I had to open my big mouth and say: Hey Aitana why don't you dress as Felicity (from American girl) for Halloween? She was enthusiastic about the idea, while I was realizing I actually made a mistake suggesting so, she asked with a big smile on her face: can you make the costume for me?
I have less than two weeks to make the costume, last week we went to choose the fabric, and a week later I started to actually put hands on it.

Pepe had some work to do in Ensenada, just for tonight. I know... I can hear you saying: Ensenada.. tonight.. work... yeah right. Well, I'm going to let your selves with your own thirty thoughts, what is bringing me here is about "los tacos de pescado".
As you know, we spent several years at the university in Ensenada, and of course we ate sufficient amount of tacos de pescado, and I say sufficient and not a lot, because for a student's budget they were kind of expensive, so once and a while we use to walk to the corner stand and eat no more than two tacos de pescado, crispy fish topped with onions, cabbage, salsa, mayo, and some lime...mmmm.
But why this fish is special?, why Ensenada has as speciality this kind of tacos?, why the fish need to be covered with batter?
After deep thinking I came with a conclusion. At some point in Ensenada history, existed the presence of English men (see this paper for some more information about it). What is one of the most popular food in England? Fish and chips, well... probably they intoduced their kind of batter covering the fish pieces; and since in Mexico every thing goes in tortilla, it was a very easy transition, of course more elements were put into the tacos, like salsas, onions and so on.
Unfortunately I haven't found tacos de pescado in San Diego that are like those in Ensenada, because usually in many places the tortilla and the fish are cold, too much cabbage and they need to improve their salsas.
Although you can make your own, there are a lot of recipes on the web you can use and have a nice dinner Ensenada style.

La crema mexicana

In almost all mexican recipes written for people in the U.S.A or out-side Mexico, we can find suggestions about how to reemplace the mexican cream in the list of ingredients (in Mexico we didn't know creams were different); because here in the US the cream is sour. The french cream from Altadena, made a good deal, is similar, although the mexican one is a little more sweet. There are some brands like "El Mexicano" with mexican products like cheeses and cream, but I found their cream salty and too liquid, nothing comparable with the real thing. BUT today, the mexican brand "LALA" is offering here its cream as we mexican know it. Last week I bought yoghurt from the same brand, even the kids recognized it, and today happily got the cream... Have you ever heard about loyalty to brands? well, I experience it with this brand, I really felt good about it.

Usted gusta?
